Almond Butter Cookies with Gluten Free Twist

Ingredients

  • 1 cup GF flour blend (I use @bobsredmill 1-1)
  • 1/2 cup almond flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup butter
  • 1 cup smooth almond butter
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla

Preparation

  1. Preheat oven to 375 and grease cookie sheets.

  2. Stir together dry ingredients and wet ingredients separately, then incorporate.

  3. Roll into balls and press down with a fork in two directions to create the crisscross lines.

  4. Bake for 8-10 minutes.

  5. Enjoy with ice cream.
