Gluten-Free Brown Sugar Shortbread Cookies
Ingredients
- 2 1/4 cups gluten-free measure for measure flour
- 1 cup unsalted butter
- Pinch of salt
- 1 cup light brown sugar
- 1/2 cup dark brown sugar
- 1 1/2 teaspoons vanilla
Preparation
Beat butter and sugars on high, then add vanilla.
Slowly add flour and salt, and beat until dough comes together.
Form into 8-inch logs about 2.5 inches in diameter on a floured surface, then wrap in plastic wrap.
Refrigerate for 4 hours or overnight.
Preheat oven to 350°F and line cookie sheets.
Optionally roll the logs in sugar.
Cut each log into 12 pieces to make about 24 cookies.
Bake for 12-14 minutes until edges are brown.
