Gluten-Free Brown Sugar Shortbread Cookies

Ingredients

  • 2 1/4 cups gluten-free measure for measure flour
  • 1 cup unsalted butter
  • Pinch of salt
  • 1 cup light brown sugar
  • 1/2 cup dark brown sugar
  • 1 1/2 teaspoons vanilla

Preparation

  1. Beat butter and sugars on high, then add vanilla.

  2. Slowly add flour and salt, and beat until dough comes together.

  3. Form into 8-inch logs about 2.5 inches in diameter on a floured surface, then wrap in plastic wrap.

  4. Refrigerate for 4 hours or overnight.

  5. Preheat oven to 350°F and line cookie sheets.

  6. Optionally roll the logs in sugar.

  7. Cut each log into 12 pieces to make about 24 cookies.

  8. Bake for 12-14 minutes until edges are brown.
