Mini Peanut Butter Banana Cake

Ingredients

  • 1 ripe banana, mashed
  • 2 tbsp peanut butter
  • 3 tbsp maple syrup
  • 1 tbsp coconut oil
  • 1/2 cup plant-based milk
  • 1 cup flour (use GF if needed)
  • 1 1/4 tsp baking powder

Frosting

  • 1/2 cup plant-based yogurt
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1-2 tsp berrylicious blend

Preparation

  1. Preheat oven to 180°C / 350°F.

  2. In a bowl, whisk together the banana, peanut butter, maple syrup, oil, and milk.

  3. Sift in the flour and baking powder, then mix gently with a spatula.

  4. Once combined, pour the batter into your greased cake pan(s).

  5. Bake for 25-30 minutes, or until an inserted toothpick comes out clean.

  6. Leave the cake in the pan for 10 minutes before removing to a wire rack.

  7. Combine 1/2 cup plant-based yogurt, 2 tbsp maple syrup, 1/2 tsp vanilla extract, and 1-2 tsp berrylicious blend.

  8. After the cake has cooled, spread the frosting on top
