Mini Peanut Butter Banana Cake
Ingredients
- 1 ripe banana, mashed
- 2 tbsp peanut butter
- 3 tbsp maple syrup
- 1 tbsp coconut oil
- 1/2 cup plant-based milk
- 1 cup flour (use GF if needed)
- 1 1/4 tsp baking powder
Frosting
- 1/2 cup plant-based yogurt
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1-2 tsp berrylicious blend
Preparation
Preheat oven to 180°C / 350°F.
In a bowl, whisk together the banana, peanut butter, maple syrup, oil, and milk.
Sift in the flour and baking powder, then mix gently with a spatula.
Once combined, pour the batter into your greased cake pan(s).
Bake for 25-30 minutes, or until an inserted toothpick comes out clean.
Leave the cake in the pan for 10 minutes before removing to a wire rack.
Combine 1/2 cup plant-based yogurt, 2 tbsp maple syrup, 1/2 tsp vanilla extract, and 1-2 tsp berrylicious blend.
After the cake has cooled, spread the frosting on top
