Nutty Homemade Hobnob Biscuits with Peanut Butter

Ingredients

  • 60g coconut oil
  • 100g crunchy peanut butter
  • 50ml maple syrup
  • 50g coconut sugar
  • Pinch of salt (if your peanut butter is unsalted)
  • 3 tbsp buckwheat flour
  • 150g oats
  • 3 tbsp almond milk

Preparation

  1. Preheat the oven to 180c

  2. Melt the coconut oil, peanut butter, maple syrup and sugar in a pan on a low heat. Add the salt, buckwheat flour and oats to the pan, stirring so everything’s combined.

  3. Add 1/3 of the mixture to a blender and add the almond milk. Blend until smooth.

  4. Add the blended mixture back into the pan and mix.

  5. Line a sheet with baking paper. Roll a tbsp size amount of mixture in your hand and press to form round biscuit shapes. The mixture will feel quite crumbly.

  6. Bake for 10 minutes and leave to cool before eating with a cup of tea.
