Simple Sweet Potato Salad with Agave Lime Dressing

Ingredients

  • 1 large or 2 medium/small sweet potatoes
  • small amount of mild curry powder
  • some oil
  • smoked tofu
  • smoked hummus
  • 1/2 avocado
  • spinach
  • iceberg lettuce
  • sugar snap peas
  • 1/2 tsp lime zest
  • 1 tbsp lime juice
  • 2 tsp agave nectar
  • 2 tsp olive oil or more
  • salt and pepper

Preparation

  1. Chop 1 large or 2 medium/small sweet potatoes into large chunks and place on a baking tray

  2. Sprinkle with a small amount of mild curry powder and spray or drizzle with some oil

  3. Preheat oven to 150°C fan forced, 170°C conventional, or 340°F

  4. Bake for 1.5 hours until caramel oozes out of the sides

  5. Prepare agave lime dressing by whisking together 1/2 tsp lime zest, 1 tbsp lime juice, 2 tsp agave nectar, 2 tsp olive oil or more, salt, and pepper until combined

  6. Drizzle the dressing on top of the salad

  7. This is an attempt to recreate the By Chloe dressing and it turned out well
