Sweet Potato Waffles with Autumn Fruits

Ingredients

  • 3 medium cooked sweet potatoes, peeled and mashed
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon flax meal mixed with 1 cup almond milk and 1 teaspoon apple cider vinegar
  • 1/4 cup coconut sugar or brown sugar
  • 1/4 cup melted coconut oil
  • 1 tablespoon grated orange rind
  • Vegetable spray for waffle iron

Preparation

  1. Mash cooked potatoes and set aside

  2. In a large bowl, whisk together flour, baking powder, and salt and set aside

  3. In another bowl combine the sweet potatoes, almond milk and flax mix, brown sugar, coconut oil, and grated orange rind

  4. Stir the sweet potato mixture into the flour mixture and thoroughly combine

  5. Using a soup serving scoop, place 1 scoop of batter onto a preheated, oiled waffle iron, and cook until lightly browned, about 5 to 6 minutes

  6. Enjoy with Coconut whip and fruits
