Air-Fried Tostones with Avocado Dip

Ingredients

Tostones

  • 2 or 3 green plantains
  • Drizzle of coconut oil
  • 1 tsp garlic powder
  • 1 tsp sea salt

Avocado dip

  • A few avocados
  • 1/2 red onion
  • White onion
  • Several garlic cloves (optional)
  • 1 or 2 tomatoes
  • Parsley
  • Lime (for fresh juice)

Preparation

Tostones

  1. Peel and slice the green plantains into rounds

  2. Lightly coat the slices with coconut oil and air-fry at 375°F for 5-7 minutes until golden

  3. Remove slices, flatten them with a press or fork

  4. Air-fry again for 5-7 minutes until crispy

  5. Season with garlic powder and sea salt while still hot

Avocado dip

  1. Mash the avocados in a bowl until chunky

  2. Finely chop the red onion, white onion, garlic cloves, and tomatoes

  3. Add the chopped ingredients and parsley to the mashed avocados

  4. Squeeze fresh lime juice over the mixture and stir to combine
