Baked Banana Fritter Spring Rolls

Ingredients

  • 1 large banana, sliced
  • 75 ml walnuts, crushed (optional)
  • 3-4 tbsp sesame seeds (optional)
  • 6 sheets dairy-free filo pastry
  • 50 ml olive oil or melted coconut oil
  • Maple syrup for serving
  • Vegan vanilla ice-cream of choice for serving

Preparation

  1. Preheat oven to 180°C

  2. Slice the banana and mix with crushed walnuts and sesame seeds if using

  3. Cut each filo pastry sheet in half to make 12 pieces

  4. Place a portion of the banana mixture on each pastry piece and roll up to form spring rolls

  5. Brush the rolls with olive oil or melted coconut oil

  6. Bake for 15-20 minutes or until golden brown

  7. Serve with maple syrup and vegan vanilla ice-cream
