Baked Banana Fritter Spring Rolls
Ingredients
- 1 large banana, sliced
- 75 ml walnuts, crushed (optional)
- 3-4 tbsp sesame seeds (optional)
- 6 sheets dairy-free filo pastry
- 50 ml olive oil or melted coconut oil
- Maple syrup for serving
- Vegan vanilla ice-cream of choice for serving
Preparation
Preheat oven to 180°C
Slice the banana and mix with crushed walnuts and sesame seeds if using
Cut each filo pastry sheet in half to make 12 pieces
Place a portion of the banana mixture on each pastry piece and roll up to form spring rolls
Brush the rolls with olive oil or melted coconut oil
Bake for 15-20 minutes or until golden brown
Serve with maple syrup and vegan vanilla ice-cream
