Zucchini Chocolate Chip Breakfast Cookies

Ingredients

  • 1 1/2 mashed banana
  • 1 cup oats
  • 2 tbsp maple syrup
  • 3/4 cup shredded zucchini
  • 1/3 cup Peanut butter
  • 1/4-1/3 cup chocolate chips

Preparation

  1. Preheat oven to 350F.

  2. Shred zucchini and pat dry with a towel or paper towels to remove excess water.

  3. In a bowl, mix together all the ingredients.

  4. Line a baking pan with parchment paper.

  5. Scoop the cookie dough into balls.

  6. Bake for 12-15 minutes depending on desired softness in the middle.

  7. Optionally top with a little more peanut butter.
