Zucchini Chocolate Chip Breakfast Cookies
Ingredients
- 1 1/2 mashed banana
- 1 cup oats
- 2 tbsp maple syrup
- 3/4 cup shredded zucchini
- 1/3 cup Peanut butter
- 1/4-1/3 cup chocolate chips
Preparation
Preheat oven to 350F.
Shred zucchini and pat dry with a towel or paper towels to remove excess water.
In a bowl, mix together all the ingredients.
Line a baking pan with parchment paper.
Scoop the cookie dough into balls.
Bake for 12-15 minutes depending on desired softness in the middle.
Optionally top with a little more peanut butter.
