Almond Cream Cheese Toasts
Ingredients
Parsley pesto
- 1 cup parsley, leaves and tender stems
- 1/2 cup walnuts
- 1 clove garlic
- 2-3 tablespoons extra virgin olive oil
- Sea salt and pepper to taste
- 1 teaspoon nutritional yeast (optional)
Sweet toast
- 1 medium banana, sliced
- 2-3 tablespoons Kite Hill plain cream cheese
- 1 tablespoon maple syrup
- 2 gluten-free toasts
- 1-2 tablespoons hemp seeds
Savory toast
- 2 gluten-free toasts
- 2-3 tablespoons Kite Hill plain cream cheese
- 1 cup baby tomatoes sliced
- Sea salt and cracked black pepper
- Micro greens optional
- 1 teaspoon sesame seeds
Preparation
Blend all the ingredients for parsley pesto in a small food processor until smooth. Set aside.
In a warm pan, drizzle the maple syrup and place the banana slices on it. Cook for 2 minutes until golden on both sides.
Spread cream cheese on the toast, place the banana slices, and sprinkle with hemp seeds.
For the savory toasts, spread a thin layer of pesto, followed by a layer of cream cheese.
Place the sliced tomatoes and micro greens on the toast. Sprinkle with sesame seeds, sea salt, cracked pepper, and a little extra olive oil.
