Bean and Capsicum Salad with Peanut Dressing
Ingredients
Dressing
- 1 tablespoon peanut butter
- 2 tablespoons tamari
- 2 tablespoons maple syrup
- 2 tablespoons toasted sesame oil
- 1 1/2 lime juice
- Few slices of red chili (optional)
Salad
- 2 red capsicum, sliced thinly
- 300g blanched green beans
- 1/4 red onion, sliced thinly
- 2 tablespoons white sesame seeds
- 1 cup edamame
Preparation
Mix all the dressing ingredients together in a bowl.
Prepare the salad ingredients by slicing the red capsicum and red onion thinly; ensure green beans are blanched.
Combine the salad ingredients in a large bowl.
Add the dressing to the salad and toss until evenly coated.
Optionally, include sliced red chili for added spice.
