Brazilian Cornmeal Cake with Coconut and Cheese
Ingredients
- 3 eggs
- 1/2 cup vegetable oil
- 1 1/2 cups milk
- 1 1/2 cups cornmeal (coarse or fine)
- 1 cup sugar
- 1/2 cup shredded coconut
- 1/2 cup shredded cheese (such as parmesan or mozzarella)
- 1 tablespoon baking powder
Preparation
Blend all ingredients except baking powder in a blender until smooth
Add baking powder and blend just until combined
Pour the batter into a greased and floured rectangular baking pan (20x30 cm or slightly smaller)
Bake in a preheated medium oven for about 40 minutes or until golden brown
Notes
This cake does not rise much
