Brazilian Cornmeal Cake with Coconut and Cheese

Ingredients

  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups milk
  • 1 1/2 cups cornmeal (coarse or fine)
  • 1 cup sugar
  • 1/2 cup shredded coconut
  • 1/2 cup shredded cheese (such as parmesan or mozzarella)
  • 1 tablespoon baking powder

Preparation

  1. Blend all ingredients except baking powder in a blender until smooth

  2. Add baking powder and blend just until combined

  3. Pour the batter into a greased and floured rectangular baking pan (20x30 cm or slightly smaller)

  4. Bake in a preheated medium oven for about 40 minutes or until golden brown

Notes

  1. This cake does not rise much
