Brazilian Cornmeal Cake with Coconut and Cheese
Ingredients
- 3 eggs
- 1/2 cup oil
- 1 1/2 cups milk
- 1 1/2 cups cornmeal
- 1 cup sugar
- 1/2 cup shredded coconut
- 1/2 cup shredded cheese (any type)
- 1 tablespoon baking powder
Preparation
Blend eggs, oil, milk, cornmeal, sugar, shredded coconut, and shredded cheese in a blender until smooth
Add baking powder and blend until just combined
Pour the batter into a greased and floured rectangular baking dish (20x30 cm or slightly smaller)
Bake in a preheated medium oven for about 40 minutes or until golden, noting that this cake does not rise much
