Caramelized Apricots with Toasted Pine Nuts and Alpine Cheese Cream

Ingredients

  • 8 ripe apricots
  • 30 g pine nuts
  • 80 g alpine cheese or spreadable cheese
  • 30 g extra virgin olive oil
  • salt
  • pepper
  • sunflower petals (untreated)

Preparation

  1. Cut the apricots into quarters and sear them in a pan over medium heat for about 2 minutes per side to achieve caramelization.

  2. Prepare the cheese cream by combining the cheese, extra virgin olive oil, and salt in a bowl; whisk until smooth and transfer to a piping bag.

  3. Toast the pine nuts in the oven at 180°C for 10 minutes.

  4. Compose the plate by arranging the caramelized apricots, add the cheese cream, sprinkle with toasted pine nuts, and garnish with Cuban oregano and sunflower petals.

  5. Serve immediately.
