Baked Zucchini Rolls with Ham and Cheese
Ingredients
- 800 grams dark zucchini
- 150 grams scamorza cheese
- 100 grams cooked ham slices
- extra virgin olive oil
- breadcrumbs
- grated parmesan
- salt
- pepper
Preparation
Slice the zucchini lengthwise into thin strips.
Grill or sauté the zucchini slices until slightly softened.
Place a slice of scamorza cheese and a piece of ham on each zucchini strip and roll up tightly.
Coat the rolls with a mixture of breadcrumbs, grated parmesan, salt, and pepper.
Drizzle the rolls with extra virgin olive oil.
Bake in a preheated oven at 180°C until golden and the cheese is melted, about 20-30 minutes.
