Cheesy Pesto Avocado Toastie

Ingredients

  • 2 tbsp cashews
  • Handful of basil leaves
  • Handful of chopped kale
  • 1 crushed garlic clove
  • 2 tbsp nutritional yeast
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • Glug of olive oil
  • Vegan cheese
  • Avocado slices
  • Sauerkraut or pickle

Preparation

  1. Add 2 tbsp cashews, handful of basil leaves, handful of chopped kale, 1 crushed garlic clove, 2 tbsp nutritional yeast, juice of 1/2 lemon, salt and pepper to taste, and a glug of olive oil to a food processor and blitz until creamy to make the pesto.

  2. Spread a thick layer of pesto on each slice of bread.

  3. Add the vegan cheese, some avocado slices, and some sauerkraut or pickle (swap for pickle if sauerkraut is not preferred).

  4. Toast the sandwich in a griddle pan until crispy and golden brown around the edges.
