Coconut Cranberry Chia Protein Balls

Ingredients

  • 1/2 cup steel cut oats
  • 1/3 cup smooth natural peanut butter
  • 1/4 cup dried cranberry
  • 1 tbsp maple syrup
  • 1 tbsp chia seeds
  • 1 tbsp coconut oil
  • 1/4 cup shredded coconut

Preparation

  1. In a food processor, combine all ingredients except for the shredded coconut and blend until a dough forms.

  2. Roll 1 tablespoon of dough into a ball and then roll it in shredded coconut to coat.

  3. This recipe makes 10-12 balls; you can double the recipe and store extras in the freezer for later.
