Easy Vegan Carrot Cake

Ingredients

  • 1/2 cup flour
  • 1 tbs flaxmeal
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp turmeric
  • 1/4 tsp ground ginger
  • pinch black pepper
  • 1 to 1.5 tbs coconut sugar
  • 1/2 cup lightly packed shredded carrot
  • 1 tbs coconut oil
  • 3 tbs unsweetened applesauce
  • 1 tbs coconut yogurt
  • 1 tbs orange marmalade

Optional add-ins

  • walnuts
  • dried fruit

Preparation

  1. Mix wet ingredients in a bowl.

  2. Slowly add in dry ingredients, folding to incorporate.

  3. Fold in any optional add-ins.

  4. Bake batter in a greased small loaf tin at 180 degrees Celsius for 20-25 minutes until golden and the centre springs back.

  5. Let cool completely on a wire rack.
