Easy Vegan Carrot Cake
Ingredients
- 1/2 cup flour
- 1 tbs flaxmeal
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp turmeric
- 1/4 tsp ground ginger
- pinch black pepper
- 1 to 1.5 tbs coconut sugar
- 1/2 cup lightly packed shredded carrot
- 1 tbs coconut oil
- 3 tbs unsweetened applesauce
- 1 tbs coconut yogurt
- 1 tbs orange marmalade
Optional add-ins
- walnuts
- dried fruit
Preparation
Mix wet ingredients in a bowl.
Slowly add in dry ingredients, folding to incorporate.
Fold in any optional add-ins.
Bake batter in a greased small loaf tin at 180 degrees Celsius for 20-25 minutes until golden and the centre springs back.
Let cool completely on a wire rack.
