Easy Vegan Macadamia Chocolate Bars

Ingredients

  • 1 bar of vegan dark chocolate (90g)
  • 2 tbsp coconut oil (at solid state)
  • 3/4 cup drippy nut butter @mayversfood
  • 1/4 cup chocolate protein powder
  • 2 cups macadamia nuts
  • Pinch of salt
  • 3-4 fresh strawberries to garnish

Preparation

  1. Line a 15x25cm brownie tray with baking paper and set aside

  2. Place a heat proof bowl over a pot of hot water and melt the chocolate and coconut oil

  3. Add in the peanut butter and mix well until combined

  4. Then incorporate the protein powder and macadamia nuts and remove from the heat. Pour the chocolate mixture over the prepared tray and spread it evenly

  5. Refrigerate for 2-3 hours until solidified

  6. Then, cut into bite sized pieces and top with fresh strawberries

Notes

  1. Macadamia nuts are rich in energy, dietary fibre, phytosterols like B-sitosterol, and contain no cholesterol. They have high mono-unsaturated fats that can lower LDL cholesterol and are a good source of B-complex vitamins. They serve as a low FODMAP alternative to cashews in vegan recipes.
