Fried Potato Salad with Pomegranate Molasses

Ingredients

  • 4 large potatoes
  • 1/2 cup pomegranate molasses
  • 1/2 cup olive oil
  • 5 cloves crushed garlic
  • 1 tablespoon crushed hot pepper
  • 1 tablespoon coriander
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 cups chopped parsley

Preparation

  1. Peel the potatoes, cut them into small cubes, place in salted water for a few minutes, then drain.

  2. Heat the oil in a deep pan and fry the potatoes until golden, then let them cool.

  3. In a bowl, mix the pomegranate molasses, olive oil, crushed garlic, crushed hot pepper, coriander, salt, and black pepper.

  4. Add the potatoes and mix well to coat them with the sauce.

  5. Add the chopped parsley and mix just before serving.

  6. Transfer to a serving dish and serve immediately.
