Healthy Avocado Porridge Boats Breakfast

Ingredients

  • 2 avocado halves
  • 1/2 cup oats
  • 2 tablespoons chia seeds
  • 2 tablespoons flax seeds
  • Boiled water

Toppings

  • 1/2 chopped red apple
  • Handful of organic blueberries
  • 2 tablespoons mixed seeds (linseeds, pumpkin seeds, sunflower seeds, sesame seeds)
  • Almond flakes
  • Cinnamon
  • Maple syrup (optional)

Preparation

  1. Cook oats, chia seeds, and flax seeds together with boiled water in a pan for 2 minutes on low heat while preparing the fruit.

  2. Chop the red apple and gather the other toppings including blueberries, mixed seeds, almond flakes, cinnamon, and maple syrup if using.

  3. Mix the toppings together in a bowl.

  4. Place the cooked oat mixture into the avocado halves.

  5. Add the mixed toppings on top of the oat mixture in the avocado boats.

  6. Sprinkle with cinnamon and drizzle with maple syrup if desired.

  7. Serve and enjoy the dish.
