Healthy Peanut Butter Rice Crispy Bars

Ingredients

  • 1 cup peanut butter
  • 6 tablespoons maple syrup (can substitute alternative liquid sweetener of choice)
  • 1-2 tablespoons melted coconut oil (optional, helps bars stick together better)
  • 1 teaspoon vanilla
  • Pinch of salt
  • 3 cups crispy brown rice cereal

Chocolate coating

  • 1 cup dairy-free chocolate chips (optionally mix 3/4 cup unsweetened cacao chips with 1/4 cup maple syrup; add almond milk if it seizes)

Preparation

  1. Melt peanut butter and maple syrup together in a microwave-safe bowl for about 30 seconds.

  2. Add to a large bowl with vanilla and salt.

  3. Stir in crispy rice cereal.

  4. Press firmly into a parchment paper-lined 8x8 pan.

  5. Melt chocolate in 30-second increments, stirring in between, until fully melted.

  6. Pour over the rice crispy bars evenly, tilting the pan if needed.

  7. Drizzle with melted peanut butter and make a swirl pattern if desired.

  8. Chill for 30 minutes until firm.

  9. Sprinkle with flaky salt.

  10. Enjoy!

Tips

  1. Coconut oil is optional and helps the bars stick together better.

  2. You can substitute maple syrup with another liquid sweetener for the main ingredients.
