Healthy Vegan Baked Apple Oatmeal

Ingredients

  • 2 cups rolled old-fashioned oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 2 cups plantbased milk (I like using unsweetened vanilla almond milk)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 Tablespoon ground flaxseed
  • 1 Tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup diced apple, divided
  • 1/2 cup raisins

Preparation

  1. Preheat oven to 180°C

  2. In a large bowl, mix together the dry ingredients: oats, cinnamon, baking powder, and salt

  3. In another bowl, combine the wet ingredients: plant-based milk, applesauce, maple syrup, ground flaxseed, coconut oil, and vanilla extract

  4. Add the wet mixture to the dry mixture and stir until well combined

  5. Fold in half of the diced apple and the raisins

  6. Pour the mixture into a greased baking dish

  7. Top with the remaining diced apple

  8. Bake for 30-40 minutes or until golden and set
