Jackfruit Sandwiches with Aromatic Indian Spices

Ingredients

  • jackfruit tin - 1 ( young green jackfruit in brine ) rinsed ,washed and roughly pulled apart .
  • oil - 2tbsp
  • red onion - 1 finely chopped
  • garlic ginger paste - 1tbsp
  • cumin seeds- 1tsp
  • salt according to your taste
  • sweet chilli sauce - 2tbsp
  • kashmiri red chilli powder - 1tsp
  • garam masala - 1tsp ( i added ( homemade kadai spice blend )
  • corriander powder - 1tsp
  • coarse corriander - 1tsp
  • for filling: cucumber , tomatoes, beetroot, homemade tamrillo chuntey, cashew cream spread , green lettuce , fennel leaves , ciabatta bread

Preparation

  1. Rinse, drain and shred jackfruit pieces

  2. In a pan , add oil on a low medium heat, then add cumin seeds let them sputter, then add garlic ginger paste saute for few seconds, add onions and cook until they are pink in color

  3. Add salt, kadai masala / garam masala, corriander powder, coarse corriander, red chilli powder and mix well until they leave a lovely aroma

  4. Then add sweet chilli sauce for tangy taste

  5. Mix well cool for few minutes with lid on top

  6. Add corriander leaves once its done

  7. Layer everything in your sandwich according to your own choice and enjoy
