Kalasan Fried Chicken Kremes

Ingredients

  • 11 tablespoons tapioca flour
  • 1 tablespoon rice flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 egg
  • cooking oil as needed

Blended spices

  • 2 cloves garlic
  • 2 shallots
  • 1 small turmeric root
  • 2 roasted candlenuts
  • 1/2 teaspoon coriander powder

Preparation

  1. Mix all ingredients in a container and stir until even, then strain the mixture.

  2. Heat oil for frying until very hot and smoking.

  3. Add the mixture little by little with a swirling motion.

  4. Once a net forms, shape the kremes as desired, then lift and drain until no oil drips.

  5. Repeat the process until all mixture is used.

  6. The Kalasan chicken kremes is ready to be served.

Notes

  1. Ayam Goreng Kalasan is a special fried chicken from Sleman, Yogyakarta, known for its savory taste and characteristic kremes. It was first introduced by Mbok Berek in her small eatery in Kalasan District on the Jogja-Solo road. Kremes is made from a thin batter of tapioca flour and leftover chicken broth to produce its unique texture.
