Lentil Bruschetta Dip

Ingredients

  • 1/2 lb steamed lentils
  • 4-5 diced tomatoes
  • 10 basil leaves
  • 1 garlic clove
  • himalayan salt & crushed black pepper, to taste
  • 1/2 tsp oregano, dried
  • 2 green onions, chopped
  • optional: 1 avocado diced

Preparation

  1. Dice tomatoes, basil, onion very small. Mince garlic and add in spices

  2. Mix cooled lentils with tomatoes and spices

  3. Add Avocado, optional

  4. Pro tip: allow bruschetta to set for at least one hour before mixing / serving. ?Serve with veggie slices, or chip of choice
