Lentil Bruschetta Dip
Ingredients
- 1/2 lb steamed lentils
- 4-5 diced tomatoes
- 10 basil leaves
- 1 garlic clove
- himalayan salt & crushed black pepper, to taste
- 1/2 tsp oregano, dried
- 2 green onions, chopped
- optional: 1 avocado diced
Preparation
Dice tomatoes, basil, onion very small. Mince garlic and add in spices
Mix cooled lentils with tomatoes and spices
Add Avocado, optional
Pro tip: allow bruschetta to set for at least one hour before mixing / serving. ?Serve with veggie slices, or chip of choice
