Lunch Toast with Zucchini, Red Pepper, and Pesto

Ingredients

  • 2 slices toast bread
  • Thin slices zucchini
  • Slices red pepper
  • Fresh salad
  • Shredded cheese
  • Red chilli pesto
  • Black pepper
  • Plant butter
  • Sea salt

Preparation

  1. Spread plant butter on the outside of the bread slices

  2. Layer thin slices of zucchini, slices of red pepper, fresh salad, shredded cheese, and red chilli pesto on the bread

  3. Sprinkle with black pepper and sea salt

  4. Toast or grill until the cheese melts and the bread is crispy, ready in about 15 minutes

Tips

  1. You can use white bread, rye bread, baguettes, or any preferred bread type

  2. Substitute with any shredded cheese you like
