Mixed Fish Tataki with Cucumber Sauce

Ingredients

  • 60g tuna
  • 60g sea bass
  • 60g salmon

Sauce

  • 300g yuzu juice
  • 20g garlic
  • 100g white onion
  • 60g ginger
  • 60g sugar
  • 30g coriander
  • 30g seedless green chili
  • 100g cucumber
  • 8g mint
  • 12g basil
  • Salt

Garnish

  • Mix of micro greens like cress
  • Tapioca chips

Preparation

  1. Blend all sauce ingredients: yuzu juice, garlic, onion, ginger, sugar, coriander, chili, cucumber, mint, basil, and salt, then strain to obtain only the liquid part.

  2. Season the salmon, tuna, and sea bass fillets and sear them for a few seconds in a hot pan with a drizzle of olive oil, including the sides.

  3. Slice the fish and arrange it on a plate with the sauce.

  4. Garnish with cress and a tapioca chip, then serve and enjoy.

Tips

  1. If you cannot find tapioca chips, use thin slices of bread baked in the oven for a few minutes or pane carasau to add crunch.
