Friday Special Marinated Cod Fish
Ingredients
Marinade
- 6-8 cod or salmon fillets
- 6 cloves garlic
- 5 tablespoons dark soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon balsamic vinegar
- 2 teaspoons chili flakes
- 1.5 teaspoons brown sugar
- squirt of maple syrup or honey (optional)
- 1 teaspoon cornflour
Garnish
- sesame seeds
- spring onions
- red chillies
Preparation
In a bowl, combine all marinade ingredients except the cornflour.
Marinate the fish fillets with the mixture for 20 minutes. Reserve a small amount of marinade for brushing after cooking, add 1 teaspoon cornflour to the reserved marinade, and mix.
Cover a baking tray with foil, brush with oil, arrange the marinated fish pieces on it, drizzle lightly with oil, and grill for 10-15 minutes at 190-200°C until cooked. Keep an eye on it as fish cooks quickly.
While the fish is cooking, heat the remaining marinade in a small pan until slightly thick. If the sauce becomes too thick, add some juices from the tray to thin it out.
Arrange the fish fillets on a plate, brush with the thickened sauce, and garnish with sesame seeds, spring onions, and sliced chillies. Optionally, serve with rice, steamed vegetables, or couscous. Use less chili flakes for milder heat, and salmon can be substituted for cod if desired.
