Friday Special: Marinated Cod or Salmon Fillets
Ingredients
- 6 - 8 cod or salmon fillets
- 6 cloves of garlic, finely chopped
- 5 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 1 tbsp balsamic vinegar
- 2 tsp chilli flakes (adjust to taste)
- 1.5 tsp brown sugar
- Squirt of maple syrup or honey (optional)
- 1 tsp cornflour
- Sesame seeds (for garnish)
- Spring onions (for garnish)
- Sliced red chillies (for garnish)
Preparation
In a bowl, combine all the marinade ingredients except the cornflour.
Marinate the fish fillets with the mixture for 20 minutes, reserving a small amount of the marinade for later use. To the reserved amount, add 1 tsp cornflour, mix, and set aside.
Cover a baking tray with foil, brush it with oil, and arrange the marinated fish pieces on it. Lightly drizzle oil over the fish.
Grill the fish for 10 - 15 minutes at around 190 - 200°C (375 - 390°F) until the fish is cooked. Keep a close eye on it as fish cooks quickly.
While the fish is cooking, heat the remaining marinade in a small pan until slightly thickened. If the sauce becomes too thick, add some of the juices from the tray the fish is cooking in to thin it out.
Arrange the cooked fish fillets on a flat plate and brush the thickened sauce over the top.
Garnish the dish with sesame seeds, spring onions, and sliced chillies.
Serve the marinated fish fillets with your choice of accompaniment, such as rice, steamed vegetables, or cous cous.
