Peanut Butter Brownie Bites with Crunchy Peanut Butter Topping
Ingredients
- 1/2 cup all-purpose flour (gluten-free 1:1 baking flour)
- 1/2 tsp. baking powder
- 1/4 cup cacao powder
- 1/2 cup coconut sugar
- 1/4 cup mini chocolate chips
- 1/2 cup peanut butter (crunchy)
- 1/4 cup almond milk
- 2 eggs
Preparation
Preheat the oven to 350°F (175°C) and grease or line an 8x8 baking dish.
In a small mixing bowl, whisk together the peanut butter, almond milk, and eggs until well combined.
In a larger bowl, whisk together the all-purpose flour, baking powder, cacao powder, and coconut sugar.
Stir the mini chocolate chips into the dry mixture.
Pour the wet ingredients into the dry mixture and stir until fully combined.
Spread the batter evenly into the prepared 8x8 baking dish.
Bake in the preheated oven for about 20 minutes or until a toothpick inserted into the center comes out clean.
Allow the brownies to slightly cool before cutting them into bite-sized pieces.
Top each brownie bite with a dollop of extra peanut butter.
