Quick and Easy Vegan Pancakes
Ingredients
- 1 cup of self raising flour
- 1 cup of plant-based milk of your choice
- 1 mashed banana
- 1 tbsp of plant-based butter
- 1 grated apple (optional)
- 1/2 tsp of vanilla paste (optional)
Preparation
Mash 1 banana with a fork in a mixing bowl then add 1 cup of flour and mix together
Then slowly add the 1 cup of plant-based milk while you stir (this will make a batter consistency)
At this point you can mix in the grated apple and the vanilla paste (this is optional)
Heat up a non stick pan on a medium heat with a tbsp of plant-based butter, carefully tilting the pan to spread the butter evenly (once the butter has melted any excess can be poured in the batter and mixed)
Add a few ladles of batter to the pan, leaving space between each one so they have room to spread
Cook for 1-2 minutes until little bubbles appear on the surface and the bases of each pancakes are golden - then carefully flip them over
Once the pancakes are golden on both sides let them rest on a plate (keep covered with foil to stay warm) while you cook the other pancakes
Repeat with the remaining batter - add some more butter in between batches if the pan starts to dry
Tower up the pancakes on your plate, drizzle over some maple syrup, chopped nuts and fresh fruit (add some plant based yoghurt such as coconut for a fresh touch)
