Rainbow Burrito Bowl Assembly
Ingredients
- kale
- arugula
- purple cabbage
- cous cous
- mangoes
- charred corn
- cilantro
Black beans
- 1 can organic black beans
- 1 pinch salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Guacamole
- 1 avocado
- 1/2 lime or lemon
- Pinch salt
- Pinch fresh cilantro
Preparation
Open the can of black beans, place them in a pan, add salt, garlic powder, and onion powder, then heat until hot.
Put the avocado, lime or lemon juice, salt, and cilantro in a bowl and mash with a fork to make guacamole.
Assemble the bowl by placing hardy greens like kale, arugula, and purple cabbage on the bottom, chop colorful veggies and fruits such as mangoes to mix in, add prepared black beans and guacamole, include charred corn, and top with copious cilantro.
Tips
Cous cous can be prepared quickly by boiling water, adding the cous cous, covering, and letting it sit for 5 minutes before adding to the bowl.
This dish is ideal for a fast, healthy vegan dinner and encourages using fresh, colorful produce to eat the rainbow.
