Simple Wholesome Granola with Superfoods

Ingredients

  • 3 cups rolled oats {can easily be swapped for gluten free}
  • 1 cup shredded coconut
  • 1 cup almonds
  • 3/4 cup pumpkin seeds
  • 1/4 cup sesame seeds
  • 1/4 cup hemp hearts
  • 2 tbsp chia seeds
  • 1/2 tsp of sea salt
  • 1/2 cup olive oil
  • 1/3 cup honey
  • 1 tsp vanilla

Preparation

  1. Preheat oven to 250

  2. Combine all dry ingredients in a large bowl

  3. Heat oil and honey in a small saucepan; once it simmers remove from heat and stir in vanilla

  4. Pour wet ingredients into the bowl and mix well

  5. Spread on 1 large or 2 medium sized cookie sheets and bake for 1 hour

  6. Remove and let cool; store in a tight sealed container for up to 10 days
