Single Serve Cherry Pie with Baked Oats
Ingredients
- 50g blended oats
- 1 tablespoon sweetener or sugar
- 3 tablespoons hot water
- 2 handfuls cherries (frozen works well)
- Drizzle of maple syrup
Optional
- Vanilla yoghurt for serving
Preparation
Prepare the fruit filling by putting cherries into a little dish and microwave on high for one minute.
Remove the dish from the microwave, drain off some excess juice, and drizzle over some maple syrup.
Blitz the oats in a blender to make flour.
Put the blended oats, sugar, and water in a separate bowl and mix with a spoon until it clumps together.
Form a dough ball with your hands.
Flour your work surface and roll out the pastry thinly so it won't tear.
Place the pastry lid on top of the cherries, press down the sides, and cut any excess pastry.
Make a few small holes in the middle of the lid to allow steam to escape.
Return the dish to the microwave for another minute. If your microwave is less than 900W, you may need to cook for an additional 30 seconds.
Serve with a generous dollop of vanilla yoghurt and eat immediately.
