Single Serve Granola

Ingredients

  • single serve granola
  • 1/3 cup rolled oats
  • 1 tbsp raw sunflower seeds
  • 1 tbsp flax seed
  • 1 tbsp raw pecans
  • 1 tbsp coconut flakes
  • 1 tsp cacao nibs
  • 1 tbsp peanut butter or nut/seed butter of choice
  • pinch of salt
  • 1/2 tsp cinnamon
  • pinch turmeric (optional) ?

Preparation

  1. Set oven to 350F

  2. In a food processor add oats, pecans, sunflower seeds, and flaxseed

  3. Roughly pulse it until it breaks up the mixture into smaller roughly chopped pieces

  4. Move contents to a bowl and add in seasonings and stir to combine

  5. Add in sweetener and nut butter and gently mix together until mixture is well incorporated

  6. Spread out mixture onto a lined baking sheet and bake in the oven for 5 minutes on the middle rack

  7. Gently stir mixture to help it cook evenly and place back into oven

  8. At the last 2-3 minutes of cooking, add coconut flakes and nibs, stir to combine and bake for remaining time

  9. Remove from oven and allow to completely cook before serving or mixing in dried fruit and other mix in items

  10. I enjoyed my bowl with some banana, berries, pumpkin seeds and almond milk
