Date Sweetened Granola

Ingredients

  • 4 1/2 cups rolled oats
  • 1/4 cup almond flour (optional)
  • 4 ripe bananas
  • 1/2 tsp salt
  • Add-ins: slivered almonds, raisins, etc

Preparation

  1. In a blender, add dates with water and bananas, then blend till smooth

  2. In a mixing bowl combine oats, salt and almond flour

  3. Pour in liquid mixture and toss to coat evenly

  4. Spread mixture out over two to three lined baking sheets

  5. Make sure to spread oats thinly on the baking sheet to ensure they cook evenly

  6. Place in oven at 325F and bake for at least 40-45 minutes, turning oats every 10 minutes to prevent burning

  7. In the last 10 mins of baking, feel free to add in some extra bits

  8. I opted to add in some golden raisins and slivered almonds

  9. After baking, remove from oven and allow to completely cool

  10. Oats will still be slightly soft when coming out of the oven

  11. Cooling them will allow them to fully crisp up

  12. Store in a dry container and use as desired (top bowls or plant based yogurt with it or feel free to snack on it)
