Toasted Coconut and Caramelized Banana Oatmeal

Ingredients

  • 1/3 cup rolled or quick oats
  • 1 tbsp coconut flakes
  • 1 tbsp ground flaxseed
  • 1/2 tsp cinnamon
  • 1 banana sliced up
  • Pinch of salt
  • 1 cup unsweetened almond milk

Preparation

  1. Toast the coconut flakes by adding them to a pan and heating on low-medium heat while stirring until they turn light brown.

  2. Caramelize the banana slices by placing them on a lined baking sheet, adding a little sweetener and salt over top, and broiling for about 3 minutes until the sugars caramelize.

  3. Add the rolled oats, ground flaxseed, cinnamon, salt, and unsweetened almond milk to a saucepan.

  4. Bring the mixture to a simmer while stirring, and allow it to thicken for 3 minutes.

  5. Serve the oatmeal as desired, topped with the toasted coconut flakes and caramelized banana slices.
