Zucchini Oats (Zoats for Short)
Ingredients
- 1/2 cup quick oats (or process your own)
- 1 tbsp ground flaxseed
- 1/2 tsp cinnamon
- pinch of salt
- 1 mashed banana
- 1 cup unsweetened almond milk ?
Preparation
Add everything except mashed banana to a sauce pan and bring to a simmer (if it’s your first time, use about 1/3 of a grated zucchini)
Stir to combine and cook on a low heat until it thickens, about 3 minutes
Remove from heat and stir in mashed banana
Adjust salt or cinnamon to your preference
Serve topped with whatever you like
