Zucchini Oats (Zoats for Short)

Ingredients

  • 1/2 cup quick oats (or process your own)
  • 1 tbsp ground flaxseed
  • 1/2 tsp cinnamon
  • pinch of salt
  • 1 mashed banana
  • 1 cup unsweetened almond milk ?

Preparation

  1. Add everything except mashed banana to a sauce pan and bring to a simmer (if it’s your first time, use about 1/3 of a grated zucchini)

  2. Stir to combine and cook on a low heat until it thickens, about 3 minutes

  3. Remove from heat and stir in mashed banana

  4. Adjust salt or cinnamon to your preference

  5. Serve topped with whatever you like
