Fluffy Zucchini Oats with Banana and Almond Milk
Ingredients
- 1/2 cup quick oats
- 1/3-1/2 grated zucchini
- 1 tbsp ground flaxseed
- 1/2 tsp cinnamon
- Pinch of salt
- 1 mashed banana
- 1 cup unsweetened almond milk
Preparation
Add everything except mashed banana to a saucepan and bring to a simmer. If it’s your first time, use about 1/3 of a grated zucchini.
Stir to combine and cook on low heat until it thickens, about 3 minutes.
Remove from heat and stir in mashed banana.
Adjust salt or cinnamon to your preference.
Serve topped with whatever you like.
