Fluffy Zucchini Oats with Banana and Almond Milk

Ingredients

  • 1/2 cup quick oats
  • 1/3-1/2 grated zucchini
  • 1 tbsp ground flaxseed
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1 mashed banana
  • 1 cup unsweetened almond milk

Preparation

  1. Add everything except mashed banana to a saucepan and bring to a simmer. If it’s your first time, use about 1/3 of a grated zucchini.

  2. Stir to combine and cook on low heat until it thickens, about 3 minutes.

  3. Remove from heat and stir in mashed banana.

  4. Adjust salt or cinnamon to your preference.

  5. Serve topped with whatever you like.
