Zucchini Oats with Banana and Almond Milk

Ingredients

  • 1/3 cup rolled oats
  • 1 tbsp ground flax seed
  • 1/2 tsp cinnamon
  • 1/2 small zucchini, grated
  • 1 medjool date, diced
  • Pinch of salt
  • 1 banana, sliced up or mashed
  • 1 cup unsweetened almond milk

Preparation

  1. Add all ingredients to a saucepan and bring to a simmer.

  2. Stir while cooking to prevent sticking and cook for 3 minutes until thickened.

  3. Remove from heat and prepare to serve.
