Smoky Vegan Jackfruit Pulled Pork

Ingredients

  • 2 cans young green jackfruit in brine
  • 1 onion
  • 4 cloves garlic
  • 1 tablespoon olive oil
  • 1/2 cup barbecue sauce
  • 1/4 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste

Preparation

  1. Drain and rinse the jackfruit from the cans

  2. Remove any hard core pieces and shred the jackfruit

  3. Sauté onion and garlic in olive oil until softened

  4. Add the shredded jackfruit and all remaining ingredients including barbecue sauce, vegetable broth, soy sauce, maple syrup, smoked paprika, chili powder, cumin, salt, and pepper

  5. Simmer for 15 to 20 minutes until the jackfruit is tender and the sauce has thickened

  6. Shred the jackfruit further with two forks to achieve a pulled texture

Serving suggestions

  1. Serve warm on toasted buns with coleslaw

  2. Use as a filling for tacos or burritos
