Tasty Pistachio Almond Cookies
Ingredients
- 2 sticks salted butter, softened
- 1 1/4 cup powdered sugar, divided
- 2 tsp vanilla
- 1 3/4 cups all purpose flour
- 1 (3.4 oz) package pistachio instant pudding mix
Preparation
Preheat oven to 350°F
Cream butter with part of the powdered sugar until light and fluffy
Add vanilla and mix well
Stir in pistachio pudding mix and flour to form a dough
Shape dough into cookies and place on a baking sheet
Bake for 10-12 minutes or until edges are golden
Roll warm cookies in remaining powdered sugar
