Tasty Pistachio Almond Cookies

Ingredients

  • 2 sticks salted butter, softened
  • 1 1/4 cup powdered sugar, divided
  • 2 tsp vanilla
  • 1 3/4 cups all purpose flour
  • 1 (3.4 oz) package pistachio instant pudding mix

Preparation

  1. Preheat oven to 350°F

  2. Cream butter with part of the powdered sugar until light and fluffy

  3. Add vanilla and mix well

  4. Stir in pistachio pudding mix and flour to form a dough

  5. Shape dough into cookies and place on a baking sheet

  6. Bake for 10-12 minutes or until edges are golden

  7. Roll warm cookies in remaining powdered sugar
