Tiramisu Chia Pudding Breakfast
Ingredients
- 1 cup coconut yogurt (any variety), plus more for topping (optional)
- 1 tablespoon cocoa powder, plus more for dusting (optional)
- 2 shots espresso (or 1/4 cup strong brewed coffee)
- 1/4 cup soy milk
- 1 tablespoon maple syrup
- 3 tablespoons chia seeds
Preparation
In a bowl or jar, whisk together coconut yogurt, cocoa powder, espresso, soy milk, maple syrup, and chia seeds until well combined
Divide the mixture into two containers or serving glasses
Cover and refrigerate for at least 3 hours, ideally overnight, until thickened
Stir the pudding before serving
Top with extra coconut yogurt and a dusting of cocoa powder for a tiramisu-like finish if desired
Serve chilled as a quick breakfast, healthy dessert, or energy-boosting snack
