Vegetarian Schnitzel with Noodles and Broccoli
Ingredients
- Plant-based chicken breast style fillet
- Water (for moistening)
- Tagliatelle pasta
- Tender stem broccoli
Schnitzel coating
- 15g golden breadcrumbs
- Cracked black pepper
- Onion salt
- Garlic powder
Noodle seasoning
- 4 x extra light cheese triangles
- Garlic puree
- Onion salt
- Cajun seasoning
- Tiny squirt of no added sugar tomato ketchup
Preparation
Flatten the plant-based chicken fillet.
Moisten it with a little water and coat with the breadcrumb mixture.
Quickly pan-fry the coated fillet.
Transfer to the oven to keep it warm and crispy.
Cook the tagliatelle according to package instructions and drain, leaving a couple of tablespoons of water.
Add the cheese triangles, garlic puree, onion salt, cajun seasoning, and a tiny squirt of no added sugar tomato ketchup to the noodles and mix well.
Cook the tender stem broccoli by steaming or boiling until tender.
Serve the schnitzel with the noodles and broccoli.
