Corn and Cauliflower Rice Paella Style Dish
Ingredients
- avocado oil
- chopped shallot
- 3 cups fresh corn
- 1 cup cauliflower rice
- 1 teaspoon garlic powder
- salt to taste
- shrimp
- sausages
- smoked paprika
- cumin
- 1/3 teaspoon saffron
- chimichurri sauce
- fresh cilantro
- lime juice
Preparation
In a cast iron skillet, heat avocado oil and add chopped shallot, 3 cups fresh corn, 1 cup cauliflower rice, 1 teaspoon garlic powder, and salt to taste. Cook until corn is tender.
Grill shrimp and sausages after rubbing them with smoked paprika, garlic powder, cumin, and 1/3 teaspoon saffron.
Prepare chimichurri sauce.
Serve the dish with chimichurri sauce on top, along with fresh cilantro and a squeeze of lime juice. Enjoy!
