Corn and Cauliflower Rice Paella Style Dish

Ingredients

  • avocado oil
  • chopped shallot
  • 3 cups fresh corn
  • 1 cup cauliflower rice
  • 1 teaspoon garlic powder
  • salt to taste
  • shrimp
  • sausages
  • smoked paprika
  • cumin
  • 1/3 teaspoon saffron
  • chimichurri sauce
  • fresh cilantro
  • lime juice

Preparation

  1. In a cast iron skillet, heat avocado oil and add chopped shallot, 3 cups fresh corn, 1 cup cauliflower rice, 1 teaspoon garlic powder, and salt to taste. Cook until corn is tender.

  2. Grill shrimp and sausages after rubbing them with smoked paprika, garlic powder, cumin, and 1/3 teaspoon saffron.

  3. Prepare chimichurri sauce.

  4. Serve the dish with chimichurri sauce on top, along with fresh cilantro and a squeeze of lime juice. Enjoy!
