Delicious Blueberry Pancakes for Breakfast
Ingredients
- 1 egg (if vegan use flax egg or @bobsredmill egg replacer)
- 2 tbsp olive oil
- 1 tsp pure vanilla extract
- 3/4 cup almond milk
- 1 cup gluten-free flour (or almond flour or all purpose)
- 1 tsp baking powder
- pinch of salt
- fresh blueberries (hand-picked and froze)
Preparation
Mix together all ingredients except for blueberries until thoroughly combined.
Fold in the blueberries.
Cook on a greased skillet or griddle for about 3-4 minutes on each side.
Remove and top with desired toppings.
