Delicious Blueberry Pancakes for Breakfast

Ingredients

  • 1 egg (if vegan use flax egg or @bobsredmill egg replacer)
  • 2 tbsp olive oil
  • 1 tsp pure vanilla extract
  • 3/4 cup almond milk
  • 1 cup gluten-free flour (or almond flour or all purpose)
  • 1 tsp baking powder
  • pinch of salt
  • fresh blueberries (hand-picked and froze)

Preparation

  1. Mix together all ingredients except for blueberries until thoroughly combined.

  2. Fold in the blueberries.

  3. Cook on a greased skillet or griddle for about 3-4 minutes on each side.

  4. Remove and top with desired toppings.
