Banana Pancakes with Pineapple Syrup

Ingredients

  • 2 bananas
  • 2 cups gluten-free flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups plant milk
  • 1/4 cup oil
  • pinch of salt (optional)

Preparation

  1. Mash 2 bananas with water to make them firm for low FODMAP compliance.

  2. Add 2 cups gluten-free flour, 1/2 teaspoon baking powder, 1/2 teaspoon vanilla extract, 1 1/2 cups plant milk, 1/4 cup oil, and a pinch of salt if desired, then mix all together to form the pancake batter.

  3. Fry the batter in vegan butter or coconut oil on medium heat for 2 minutes on each side or until slightly golden.

  4. Top with pineapple and maple syrup for serving.
