Banana Pancakes with Pineapple Syrup
Ingredients
- 2 bananas
- 2 cups gluten-free flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 1/2 cups plant milk
- 1/4 cup oil
- pinch of salt (optional)
Preparation
Mash 2 bananas with water to make them firm for low FODMAP compliance.
Add 2 cups gluten-free flour, 1/2 teaspoon baking powder, 1/2 teaspoon vanilla extract, 1 1/2 cups plant milk, 1/4 cup oil, and a pinch of salt if desired, then mix all together to form the pancake batter.
Fry the batter in vegan butter or coconut oil on medium heat for 2 minutes on each side or until slightly golden.
Top with pineapple and maple syrup for serving.
