Delicious Homemade Pumpkin Spice Energy Bites
Ingredients
- 3/4 cup organic pumpkin puree
- 1 teaspoon vanilla
- 1/3 cup peanut butter
- 1/4 cup granulated sweetener
- pinch of salt
- 2 1/2 cups gluten-free rolled oats
- 1/4 cup pepitas
- 1/4 cup cacao nibs
- 2 tablespoons collagen peptides
- 1 tablespoon pumpkin pie spice
- 1 tablespoon hemp seeds
- 1 tablespoon chia seeds
- 1/3 cup keto chocolate chips
- 3-4 chopped medjool dates
Preparation
Combine 3/4 cup organic pumpkin puree, 1 teaspoon vanilla, 1/3 cup peanut butter, 1/4 cup granulated sweetener, and a pinch of salt using a hand mixer.
Add in 2 1/2 cups gluten-free rolled oats, 1/4 cup pepitas, 1/4 cup cacao nibs, 2 tablespoons collagen peptides, 1 tablespoon pumpkin pie spice, and 1 tablespoon each of hemp seeds and chia seeds.
Fold in 1/3 cup keto chocolate chips and 3-4 chopped medjool dates.
If the mixture is too wet, add more oats; if too dry, add more pumpkin puree or peanut butter.
Roll the mixture into balls (yields about 30) and refrigerate before eating.
