Delicious Homemade Pumpkin Spice Energy Bites

Ingredients

  • 3/4 cup organic pumpkin puree
  • 1 teaspoon vanilla
  • 1/3 cup peanut butter
  • 1/4 cup granulated sweetener
  • pinch of salt
  • 2 1/2 cups gluten-free rolled oats
  • 1/4 cup pepitas
  • 1/4 cup cacao nibs
  • 2 tablespoons collagen peptides
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon hemp seeds
  • 1 tablespoon chia seeds
  • 1/3 cup keto chocolate chips
  • 3-4 chopped medjool dates

Preparation

  1. Combine 3/4 cup organic pumpkin puree, 1 teaspoon vanilla, 1/3 cup peanut butter, 1/4 cup granulated sweetener, and a pinch of salt using a hand mixer.

  2. Add in 2 1/2 cups gluten-free rolled oats, 1/4 cup pepitas, 1/4 cup cacao nibs, 2 tablespoons collagen peptides, 1 tablespoon pumpkin pie spice, and 1 tablespoon each of hemp seeds and chia seeds.

  3. Fold in 1/3 cup keto chocolate chips and 3-4 chopped medjool dates.

  4. If the mixture is too wet, add more oats; if too dry, add more pumpkin puree or peanut butter.

  5. Roll the mixture into balls (yields about 30) and refrigerate before eating.
