Pumpkin Pie Chia Pudding Breakfast

Ingredients

  • 1/4 cup chia seeds
  • 1/2 cup pumpkin purée
  • 3/4 cup unsweetened almond milk
  • 1/4-1/2 cup Lifeway pumpkin spice kefir
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla

Preparation

  1. In a jar, mix together all the ingredients.

  2. Shake well to combine.

  3. Refrigerate for at least 2 hours or up to overnight.

  4. Top with grain-free granola before serving.

  5. Note that using kefir makes the pudding creamy and provides probiotics without cooking.

  6. Kefir is 99% lactose-free and beneficial for gut health.
